The Hummingbird Ceviche House is the self-owned restaurant of chef Ricardo Zarate, who grew up in Lima, Peru, where he earned the nickname Colibri, Spanish for hummingbird. Built on Nikkei concepts he tested at his Colibri pop-ups, it seats up to 20 guests, serves set menus for food and drinks, and offers pickup, delivery and private events.
